Hi Livi here,

Our  latest Hospitality Training session  at Boston Shaker Bar  was a great success. Big thank you to all those Sunshine Coast hospitality workers who share a keen interest in the industry & make these days worthwhile by attending.

Newly appointed Never Never Distilling Co. brand ambassador Shay Chamberlain brought a wealth of knowledge and as usual I took some notes on the most important stuff for those who might want a recap.

 Lets talk products

Triple Juniper

As the name suggests this gin takes a dance with the juniper on 3 occasions.

On the first occasion dried Juniper is macerated in the neutral spirit, this is followed with the addition of fresh Juniper just prior to distillation and the last touch point is the fresh Juniper suspended in the vapour baskets for a delicate finish.

Triple Juniper is a Single Shot Gin. If you’re wondering what that means like I was, well it basically means no blending is done post distillation. The product is distilled and bottled.


Interesting facts :

Juniper Berries are actually not berries they’re cones.

There is a science into the reason the Never Never Gin marries so well with tonic. On a molecular level , the citrus and juniper bonds well with the quinine found in tonic. Well thats the dummy version if you want to read more head to Never Never Distilling Co site.


 Southern Strength

This Earthy, Citrusy high proof gin is the result of blending the Triple Juniper Gin with single distillates of angelica Root, coriander seed and citrus peel. This process of blending multiple distillates creates a product known as a “compound gin”.

Southern Strength was the first Australian gin to win  “Best Classic Gin”  in the world in 2019. The word classic referring to a “London Dry”  Style being  Juniper and citrus forward.

While Juniper is the hero in the Never Never range, a few other botanicals play a key role. ( pictured )

Interesting Fact :

Over 80 % of the worlds Orris root is purchased by Chanel. Never Never uses a small amount of orris root due to it’s fragrance retaining properties.

Juniper has a unique flavour. We experienced the fragrant, piney, florally aroma captured in this “Juniper Mist”. If you would like to try it for yourself, just ask us we have plenty of dried juniper berries at the bar.!


 Juniper Freak

I’ll admit,  I didn’t think this would be my favourite. I was wrong.

Juniper Freak is a Navy Strength Gin sitting at 58%. It’s basically a higher proof version of the Triple Juniper blended with  a single distillate of Juniper – I guess that’s makes it quadruple juniper !!.

As you may recall this process of blending distillates to create a final product is referred to as a compound gin. The additional single Juniper distillate is made with  100% fresh juniper berries ( air freighted over) from Macedonia. The result is a vibrant juniper forward,  zesty high strength gin, rightfully awarded “Best Navy Strength Gin” at the Australian distilling awards.

Ginache

This striking bright red spirit definitely stands out on the shelves at Boston Shaker Bar. The colour and taste are the result of steeping Triple Juniper Gin in McLaren Vale Grenache Grapes. The grapes are de-stemmed, pressed and the entire fruit (juice, skins and all) is submerged in Triple juniper for 3 -4 weeks before straining and bottling the spirit.

It’s no mystery why Master distiller Jess, a former winemaker was the perfect candidate for perfecting this creation. By using the best local regional produce on offer ( McLaren Vale Grapes) these guys have created a versatile spirit that works well in a Millionaire, Charlie Chaplin, Sour, Fizz and is superb served just on ice.


 Dark Series

In the final leg of our hospitality training session, Shay introduced us to some specialty bottles in the Dark series. The Dark series are releases of experimental creations and there are some tasty treats. If you’re a bit of an explorer I suggest you jump on board the train and try a few for yourself. These Products are still in the experimental phase and  production is small and boutique, the Ginache began its journey here and is now a staple in their main range.
